Menu Plan Monday

We're going to be out of town a couple of days this week, so I'm only planning four meals. I'm also going to try to get back on track with the blog and actually write about the groceries we're getting for our $40 a week. We've been doing a great job of sticking to our budget, but I haven't been doing such a great job of posting about it!

We have some crescent rolls in the fridge nearing their expiration date, and hubby requested we use them to make pigs in a blanket. I'm not a big fan of hot dogs, but I can work them into the menu occasionally if it makes him happy. :-) I'll definitely spend a little more to get the all-beef ones--even on a tight budget those are worth it to me!

Since we aren't going to need to spend as much for meals this week because of being out of town, I'm planning to buy some parmesan cheese and walnuts or pecans. Kroger has red bell peppers on sale this week too, so I'll probably also get several of those to chop and put in the freezer. I did that with green peppers at the end of summer when they were cheap, and it's super-handy.

BREAKFASTS
Yogurt muffins (I'm working on a recipe for these. I'll post later this week!)
Egg on English muffins
Cold cereal
Oatmeal

LUNCHES
Pigs in a blanket, mac & cheese, baby carrots
Tomato soup, toasted cheese on English muffins
Leftover white bean soup
Chili dogs, corn chips, baby carrots

DINNERS
BBQ pork pizza (leftover pork from freezer, bottled bbq sauce, red onion & cheddar cheese on homemade crust)
White bean soup (meatless variation on this recipe)
Black bean burritos, corn chips, fruit
Biscuits & sausage gravy, scrambled eggs, fried apples

Thanks for the tip on freezing the peppers! I went to Kroger last week and picked up a red pepper and thought the price was /lb but it was $1.99 for one pepper. Yikes! I wanted to put it back but was in self checkout and didn't know how to take it off. What stunk was that I picked the smallest one because I thought it would be cheaper. I will def look for peppers on sale and chop and freeze from now on.

Peppers are $1/ea at Kroger this week--still more than I'd like to pay, but cheaper than I've seen them in a couple of month!. I think I got them for 59 cents each in late summer. I chop them, put them in snack-sized bags in about 1/2 cup portions, then drop the snack-sized baggies into a big freezer bag.

I freeze peppers too. It is cheaper and way more convenient too, since they are already sliced. And I must say that your family eats really well on such a tight budget!

Vanessa, I have to give a lot of credit to my husband for eating so well on a budget! He's a computer programmer turned stay-at-home-dad who uses all of his logic and organization skills to bargain hunt, coupon, and rebate! :-)

My Kroger has frozen bags of diced bell pepper, onion and celery that routinely go on sale for $1.
I usually buy them in the winter when bell peppers are expensive.

Kaycee, I haven't noticed those at my Kroger, but I'll definitely have to take a look. Sounds like that might be the way to go in the winter!
