Refrigerator Muffins

While packing this week I came across an old notebook of recipes and found this one for refrigerator raisin bran muffins. I was thrilled because there are lots of great deals on cereal this week and this will be a great way to use up some of what we've purchased. I love this recipe because the muffins aren't too sweet, and it's so convenient to have the batter in the fridge so you can have hot muffins on the table in just a few minutes. It also makes it easy to fix just a small batch--a tin of 6 muffins fits nicely in my toaster oven. The batter will keep for a week in the fridge and I think it yields about 24 muffins. I not positive about how many because the recipe is a little smudged where something was dropped on it! :)

2 eggs
2 cups buttermilk
1/2 c vegetable oil
1/2 c sugar
3 cups raisin bran cereal
2 1/2 c all-purpose flour
1 tbsp baking soda
1/2 tsp salt

Mix first four ingredients together in a large mixing bowl. Stir in raisin bran. In a separate bowl, sift flour, baking soda, and salt together. Add to wet ingredients, stirring just until mixed. Batter can be refrigerated up to 7 days.

To bake, preheat oven to 400. Grease muffin cups and fill 2/3 full with batter. Bake for 15-20 minutes or until golden brown.

Updated 5/5: I was supposed to finish packing up the kitchen last night, but when I realized the baking supplies and a set of mixing bowls were still here, I decided to mix up a batch of these. I only had about 1 1/2 c of all-purpose flour (I never run out, but have been letting things get low in preparation for moving!), so I subbed a cup of quick oats for the rest of the flour. I baked six muffins in the toaster oven this morning, and my family thinks I'm awesome! My 20 month old daughter ate 2, my super-picky 3 yr old son had 1 1/2 , and hubs and I polished off the rest. After baking 6, I'd say the recipe will probably yield about 18. I'm so glad I found this recipe--I think it will become a regular breakfast around here. It would also be really easy to vary by adding nuts, sunflower seeds, dried fruits, or even different cereals.

Menu Plan Monday

We're moving this week (aaack!), so my menu planning is really just jotting down a few ideas of things we can throw together quickly. I dream that one day I'll be organized enough to prepare for something like a move by making all kinds of meals ahead of time, then storing them in the freezer so we can just heat and eat healthy homemade meals when life gets crazy. Until then, my plan is to buy lots of snacks and convenience foods in times like this. I figure living on peanut butter sandwiches and hot pockets for a week won't kill us, and is probably better for us than eating fast food. It's definitely better for the budget! :)

Armed with that philosophy, here's what we'll be eating this week:

Pasta is definitely my favorite quick meal, in case you didn't pick up on that! :) I fried up a pound of bacon tonight, so it's ready to go for all those meals that will use it. That will make several meals really quick to put together. We had the quesadillas for dinner tonight, and the leftover filling is in the fridge ready to go for lunch tomorrow. We used monterrey jack cheese and really liked the combination of bacon, black beans & zuchini--definitely something we'll be making again! Maybe next time I'll add some corn, too.

We eat a lot of cereal for breakfast, but we also love to snack on it. As a matter of fact, I'm crunching on some frosted mini-wheats as I type. :)

Menu Plan Monday

We did better at sticking to our menu last week but still ate out too much, especially over the weekend. We're going to be moving in less than two weeks and hubby and I both seem to be using that as an excuse to go out for dinner. ("We'll have more energy for packing after the kids go to bed if don't have to cook and clean up!") Well, very little packing has been done and we're spending too much on eating out. Hopefully I'll have more willpower this week! :-)

Grocery Shopping

I finally went to the grocery store today for some real shopping--with a list and a plan and everything. There were quick trips to Aldi and Kroger on Friday for some necessities (grapes, cheese, crackers, bread, ham, pretzels, soft drinks, and a great deal on Boca products), but unfortunately I can't find the receipts on those. I think we spent about $16--definitely between $15 and $20.

Menu Plan Monday

I haven't been very organized for the last couple of weeks, so I didn't do any menu planning or blogging. We did stay under our $40/week grocery budget, but largely because we ate out far too much. I can tell I've put a few pounds on lately and I'm sure the frequent trips to Arby's have contributed to that! I'm determined to get organized and back on track this week. I went grocery shopping on Friday (the first day of our budget week) without a list or a plan and spent $39.26. That means I had to look at what I bought and what was in the house and come up with a plan to feed us, since there wasn't any money left to run out and pick up extra ingredients. It's not the greatest menu ever, but we won't be going hungry! :-)

Menu Plan Monday

Last week we ate several "picnic" lunches at our new house while we were painting. That meant lots of sandwiches (pbj or lunch meat), chips, and apples. Because of that, there were several dishes we didn't make that are back on the menu again this week. We'll probably have a few more "picnics" this week, so I haven't planned much for lunches. The Mexican lasagna should make enough leftovers for at least two meals, so I think this menu will get us through the week.

Krogering

For budgeting purposes we start our new week on Fridays, and I spent about half of this week's budget tonight at Kroger. I felt reckless, shopping without coupons and paying full-price for things! However, we just found out this evening that some family members are coming over tomorrow to help us with painting at the new house, so I figured feeding them a hearty meal is the least I can do. :-) I plan to cook the roast in the slow-cooker with some peppers and italian seasoning, then shred it for sandwiches and top them with the provolone cheese. Since I have to work all day tomorrow and hubby will be busy watching the kiddos and/or painting, the slow-cooker is definitely the way to go!

Here's what I bought tonight:

I would normally make my own salad dressing mix, rather than buying the packets. However, I've been wanting a cruet to mix up my own vinaigrettes and store them, so I gave in tonight and bought it.

The chocolate-covered almonds were definitely an indulgence, but I'll take them to work and stash them in my desk to keep me from visiting the vending machine. Two different times this week I gave in to cravings and spent 80 cents for a pack of peanut M&Ms. Each of the boxes I bought tonight has five individual packets, so this should be much better for the budget.

Black Bean Salsa

I made black beans in the slow-cooker today--first time I'd used it to cook dried beans--and they turned out great! We had black beans and rice tonight, and I as was thinking about ways to use up the leftovers this recipe came to mind. I find this black bean salsa totally addictive and can make a meal of it and corn chips. I also love it with a plain cheese quesadilla. I usually make it with all black beans, but have also used half kidney beans or half black-eyed peas.

Black Bean Salsa
1/4 c white wine vinegar (I've used other vinegars when I didn't have the white wine variety on hand--the taste is a little stronger, but I still though it was good)
1/4 c vegetable oil
1 1/2 t sugar
1 tsp dried oregano
1 tsp dried basil
2 t minced garlic (I'm a garlic-a-holic, so I usually use more!)
2 15 oz cans of black beans, drained and rinsed
1 1/2 cups frozen corn, thawed
1 small red, yellow, or orange bell pepper, finely chopped
1/2 red onion, finely chopped
2 oz can diced green chiles with liquid (or jalapenos if you like a little heat)
1/4 c chopped cilantro (I've also used parsley when I didn't have cilantro on hand)

Whisk together first six ingredients in a medium bowl. Stir in remaining ingredients and season with salt and pepper to taste. Refrigerate for at least one hour before serving to allow flavors to blend.

Menu Plan Monday

This week I planned our menu with the goal of cleaning out the freezer out some, since we're going to be moving in about a month. I managed to incorporate several items (salmon, popcorn shrimp, sausage, english muffins, lots of frozen veggies), but I have some cheddar bratwurst in there that I got really cheap a couple months ago and have no idea what to do with them. I've never cooked bratwurst before. If you have any suggestions for me, please leave them in the comments! I'd really like to work them into next week's menu.

I think we'll have to spend about $1 OOP to get 4 12-packs of pepsi products. I hope they have diet Mountain Dew. :)

Grocery shopping

So far this week, we've spent $28.60. I can't list everything we've purchased because I trashed the receipts without thinking. I'm still a little disorganized from last week. :) There were several non-essential purchases, though--beer, donuts, and a Cadbury egg come to mind. I know I also got apples, kiwi, lasagna noodles, mozzarella cheese, corn tortillas and black beans, but that's all I can remember for sure. Either way, we have most everything for our menu this week and are going to try not to spend any more. We're going to be moving in about a month and need to work on cleaning out some of what's in our freezer and cabinets!

Slow-Cooker Lasagna

This makes a LOT of lasagna. If you have a small family or aren't big fans of leftovers, you should plan to freeze half for later.

2 26 oz jars of spaghetti sauce
1/2 lb of cooked ground meat (optional)
15 oz tub of ricotta cheese
2 cups shredded mozzarella
1/2 cup shredded parmesan
1 egg, beaten
2 tsp Italian seasoning
any vegetables you want to add (I used a box of frozen spinach, thawed and drained well, and about a cup of finely chopped uncooked broccoli)
uncooked lasagna noodles (regular, NOT the no-cook kind)

I used a 6-quart oval slow-cooker for this recipe. In a medium-sized bowl, combine egg, ricotta, 1 cup mozzarella, parmesan, Italian seasoning, and vegetables. If you're using meat, stir it into the sauce. Cover the bottom of your slow-cooker with a layer of sauce, then add a layer of noodles. You'll probably have to break the noodles to fill in all the spaces. Spread a layer of the ricotta mixture over the noodles, then cover with another layer of sauce. Continue making layers, ending with sauce. Make sure the top layer of noodles is well-covered with sauce.

Cook on low until noodles are tender and most of the liquid has been absorbed. It took about 3 1/2 hrs in my slow-cooker, but I think it cooks a little faster than most. Sprinkle the top with 1 cup of mozzarella and cover just until it melts.

Menu Plan Monday

We did not stick to our menu or our budget last week. It was the first week this year we've gone over our $40/week goal, and we went way over! Hubby had minor surgery on Thursday and his mother came up for a couple of days to help us out, so it was not a typical week. There was a lot of eating out and convenience foods. We're going to get back on track this week!

I didn't make the beef stew I had planned last week, so it's on the menu again. The beef stew and lasagna should each make enough leftovers for a couple of meals, so I'm only planning five lunches and five dinners.

Slow-cooker Pumpkin Butter

My family loves this pumpkin butter, and it's so easy to make in the slow-cooker. It's also very inexpensive to mix up a batch. We eat this on about any kind of bread--toast, biscuits, pancakes, bagels, muffins. This is adapted from the recipe in Not Your Mother's Slow Cooker Cookbook. The original recipe called for quite a bit more sweetener, but we think it's tasty just like this.

29 oz can of pumpkin (plain pumpkin, NOT pumpkin pie mix)
3/4 cup brown sugar
2 tbsp honey (or more to taste)
1 1/2 tsp pumpkin pie spice (or your own mix of cinnamon, ginger, nutmeg & cloves)
1 tbsp apple cider vinegar
juice of 1 lemon

Put everything in a crockpot, stir well, and cook with the lid on for about 2 hours. Stir every 30 minutes or so and be sure to scrape the sides down well. I use a 2 qt crock for this, but if you use a larger one it would probably cook faster. Then take the lid off and cook for another 30 mins to an hour until it gets as thick as you'd like. It will keep in the refrigerator for up to six weeks, although it rarely lasts that long at my house!

First shopping trip of the week was to Aldi, where I spent $26.28. That leaves $13.72 in the budget, which is enough to cover the rest of the things we need (milk, eggs, fruit). We also have a $20 credit at Kroger from getting a prescription filled that we'll probably use to stock up on soft drinks and some other non-essential items this week.

So for less than $17 after Easy Saver rebates, our house smells great, our daughter has diapers, we're stocked up on broth for the next six months, and we no longer have to take the rechargeable batteries out of the camera to use the wireless mouse. :-) I'd say it was a really good shopping trip!

Eat Cheap at Arby's

Arby's is really promoting their new Roastburger sandwich. I tried the bacon-cheddar one at lunch today and thought it was quite good. You can print a coupon here for a free roastburger with the purchase of a drink, or sign up to join the Arby's Extras and they'll email you a coupon for a free one. We also got lots of good Arby's coupons in the mail this week and were able to combine those with the printable for a really cheap lunch out!

Grocery Shopping

We went to Aldi and Kroger today and spent most of what was left in this week's grocery budget. At Aldi we bought:

The coupon for the free Oscar Meyer hot dogs came in the mail, along with several other coupons. Kroger direct mails coupons to their customers based on your buying preferences. If you shop there regularly, this is a really nice perk!
